To assemble the cake
You will need a slim cake board and , if possible , a cake decorating turntable , an offset spatula and a cake scraper , some disposable icing bags and a 12 point star nozzle . Place the cake board on the turntable . Place a tablespoon of butter cream on the cake board and spread it before placing the first of the cakes on the board .
Spread about 3 tablespoons of buttercream on the cake and with the spatula create a little lip around the edge of the cake so the lemon curd won ’ t run off . Spread 2 tablespoons of lemon curd on the buttercream but not quite to the edges . Repeat this until the 2 or 4 layers are assembled .
With the spatula spread a thin layer around the sides of the cake but not on the top . Using the cake scraper turn the turntable and holding the scraper vertically against the cake side take away the excess buttercream . Place the cake in the fridge to chill the icing for about half an hour .
Spread a second layer of buttercream around the top of the cake and then work down the sides of the cake and use the scraper to scrape away the excess from the sides . Use the spatula to smooth out the top of the cake .
Place the star nozzle in a piping bag and pipe rosettes around the top of the cake and around the base of the cake . Add the flowers .
