Ingredients
2 lbs runner beans
4 to 5 medium onions
680g demerara sugar
1 ½ tbsp turmeric powder
2 tbsp of cornflower (optional)
1 ½ tbsp English mustard powder
900ml (1.5 pints) of cider vinegar
Method
1. Peel onions and cut small.
2. Slice beans and boil together
with onions in salted water until both are
tender.
3. Strain and drain well then cut up
small.
4. Add sugar and 1¼ pints of vinegar
and boil for 15 mins.
5. Mix turmeric, mustard and cornflour
with the remaining vinegar and add to
the bean and onions
6 Allow to cool slightly and pot into
sterilised jars.
