Ingredients
115g ( 4oz ) caster sugar 55g ( 2oz ) ground almonds 125g ( 4½oz ) plain flour , plus extra for dusting 100g ( 3½oz ) butter , finely diced 1 large free-range egg , plus 1 extra yolk Finely grated zest of 1 small lemon Pinch of salt
For the filling
85g ( 3oz ) butter 85g ( 3oz ) caster sugar 2 medium free-range eggs 3 drops almond essence 55g ( 2oz ) fresh white breadcrumbs 85g ( 3oz ) ground almonds 8 tbsp raspberry jam 20g ( ¾oz ) flaked almonds
Method First , make the pastry . Put the sugar , almonds and flour into a food processor , and turn on to full speed for a few seconds . Add the diced butter and work again until just blended in . The mixture will resemble fine breadcrumbs . Add the egg and extra yolk , the lemon zest , 2 tsp water and a tiny pinch of salt . Work again until the pastry balls . Wrap in cling film and refrigerate . Preheat the oven to 190 ° C / 375 ° F / Gas 5 . Roll out the chilled pastry on a flour-dusted surface and use to line this tart tin . If it breaks it can be repaired by pressing with your fingers . Make the shell as even as possible , and ensure that around the edges it is pushed right up to the top , as it will shrink as it bakes . Be careful to press into the bottom edges to eliminate air between the tin and pastry . To make the filling , put the butter and sugar in a blender , and blend until light and fluffy . With the machine running on full speed , add the eggs and almond essence until combined to a smooth paste , then fold in the breadcrumbs and ground almonds . Put the pastry shell on a baking tray , prick the base with a fork and line with foil . Fill with baking beans and bake blind for 10 minutes . Remove the foil and beans , and leave to cool slightly , then fill the base with a layer of raspberry jam . Cover this with the almond filling . Scrape the surface smooth and level , and sprinkle with the flaked almonds . Return to the oven and bake for 25-30 minutes , until risen and lightly browned .
