This Australian company are cutting
up the rule book with their innovative
range of knives
K
nives have been made for kitchens and cooks
for some 800 years. Over that time they have
developed along two major paths. On one
side of the blade are the professional knives
made in Europe that tend to be heavier,
thicker and use softer steel. On the other are
Japanese style knives that are lightweight, sharper and
use harder steel.
Enter Australian Mark Henry and his company Füri,
who bring their knives right down in the middle of the
two existing styles. They are designed to be both very
sharp and very tough. They use a different type of high
carbon Japanese stainless steel, noted for its superior
durability and ease of sharpening. The blade grind is

sharp, but light and fragile, Japanese style. Crucially, they
are also made seamlessly from one piece of metal with
nowhere for food to get trapped as well as having no
rivets to fail.
Füri have also looked at how we currently hold our
