Steam is just what water becomes when it boils,
but it’s a gaseous state that’s great for cooking.
Boiling can leave your veg soggy, frying and
roasting can leave food greasy but steaming gets
fantastic results. It keeps vitamins and nutrients in
the food rather than driving them into the water
they are cooked in. Vitally, it keeps food moist and
succulent, as well as full of flavour and texture. It’s
not just veg that benefits from steam; fish, meat
and grains can also be cooked like this. Steaming
is a central part of oriental cuisine as seen perhaps
most addictively in dim sum.
For a simple cooking method, steamers come in
