Q. What difference does the glass
make when serving wine? Does it
really make the wine taste better?
A. “Glasses are not simply
fundamental, they play a huge role in
the whole wine experience.
When you like to get something, and
I mean anything, up to ‘perfection’
you have to have the correct tools to
play with. Imagine competing in a
Formula 1 Grand Prix. You will surely
get through the last lap with your Fiat
500, but you will feel frustrated along
the way by being conscious of being
a good driver but not able to show it
off at the highest level because of an
inadequate car.”
Q. Why do we serve white wine in
a smaller bowled glass and red in
a bigger bowled glass?
A. “Normally white wine glasses are
smaller because having a shorter
ageing period they don’t need to
open up as much as a red wine – it
is like stretching your body after a
flight of 10 hours compared to after
a flight of one hour.
Fizz for me works exactly as
a still wine and I am afraid to
disappoint anyone but a flute glass
is mainly for show, for the bubbles,
to see them and admire the
elegance of them but technically a
normal white wine glass (a Riesling
glass type) lets the juice do the job.
Sweet wines are a different story
although I firmly believe that even
this type of wine acts differently
according to the structure, the
residual sugar, the alcohol by
volume, therefore, a larger glass is
more suitable for an aged, mature
sweet wine and a smaller glass
prefers less complexity.”
Q. Is there a big difference
between crystal and glass?
A. “There is definitely a
difference which affects the
entire wine experience: The wine
looks brighter and clearer. No
residual traces of detergent can
be found on a crystal-made glass.
