For years , knife makers have been trying to achieve the ultimate cutting edge , which is rated using a Rockwell hardness scale . However , the brittleness of the knife has made this impossible to produce commercially without using a Damascus method , which is very expensive . I . O . Shen have overcome this problem by sandwiching two softer outer layers ( Rockwell 10 °) of steel with Rockwell 62 ° to produce the ultimate cutting edge . I . O . Shen call this Triplex Steel Technology .
All the knives in the I . O . Shen range have used the very latest technology to construct a blade that is not only amazingly sharp but will also retain their edge for a phenomenal amount of time . They have been hand sharpened to a 15 ° angle , which allows for wonderful slicing and portion control .

Yoshikin uses its own proprietary stainless steel called CROMOVA 18 and this material has been designed exclusively for Global . The steel is hard enough for Global knives to keep their edge for a long time , but still soft enough so it ’ s not too difficult to sharpen them . The CRO in CROMOVA 18 stands for chromium , and the 18 is the percentage of chromium in the steel . This high percentage contributes to Global ’ s excellent stain resistance . The MO and VA stand for molybdenum and vanadium – two metallic elements that give a knife good edge retention .
