Harts Kitchen Icon Meet Mr Global I f there’s one man who has come to embody Global Knives it’s Mino Tsuchida. Affectionally known as Mr Global he’s become an ambassador for the brand that he helped establish back in 1985. He’s a star presence at kitchenware shows and in YouTube videos where he shows how to care for your Global knife and return its razor-like edge by sharpening it properly. Mino was born and raised on a farm in Niigata, Japan in 1938. Growing up, he learned an appreciation for tooling. After graduating from high school, Mino began working full-time at Seki Cutlery Mfg. Co. Ltd in conjunction with studying at HOSE University. Between 1956-1985 he was employed in the export sales department of Seki. Mino’s years of working in the cutlery industry won him many strong business connections. Unknown to Mino at the time these connections would prove integral to the starting a successful Global Knives international enterprise. In 1985, Mino set up Master Cutlery Corporation and soon after he began establishing the Global brand with Yoshikin. Global Classic’s initial launch comprised of only 12 knives compared to the hundreds of knives and accessories now available worldwide. In 1990 they started exporting to Canada, Spain and Australia and sales increased again significantly. Today the factory capacity is filled many months in advance and Global exports to 88 countries around the world. Mino recently celebrated his 80th birthday and shows no signs of retiring. “Since 1985 our Global knives have kept the same design - a testament to their quality. We at Global are proud to say that our knives and sharpening systems are the choice of many restaurants, top chefs and popular cooking television programs. I hope you enjoy food preparation with Global.” Mino Tsuchida - ‘Mr. Global’ Sharp Practice Although Global’s unique design means their sharpness is maintained longer than most knives, they do still need to be sharpened. Global recommends periodically sharpening your knives using either a whetstone or ceramic stone. In between stone sharpenings, it is recommended that you use the Global fine ceramic or diamond rod to keep the edges of your knives aligned. However, knife sharpening is a skill to master. To make things easier, Global have pioneered water wheel sharpeners - the MinoSharp and MinoSharp Plus. These are handheld ceramic sharpeners and no experience or skill is required to use them simply fill the reservoir with water and run your knife backwards and forwards a few times. The revolutionary ceramic wheels ensure the blade is sharpened at the correct angle. 38 www.hartsofstur.com Global Ceramic Knife Sharpener RRP: £62.50 Harts Price: £44.95 Minosharp Sharpening Kit With Medium Stone RRP: £84.00 Harts Price: £58.80 Global G-75 Diamond Sharpening Steel RRP: £175.00 Harts Price: £129.95
