e’s half the man he used to be. Michelin-
starred chef Tom Kerridge has lost 12
stone since changing his own eating
habits when he became a father. The
chunky chef who came to fame on TV
with his indulgent pub food has spent
the last four years pushing healthy
eating for people like us, that love their
food.
And we don’t know about you, but
we trust the only chef in the world
to hold two Michelin stars in a pub,
The Hand & Flowers in Marlow, to
deliver deliciousness over any number
of yoga-performing ‘clean eating’
Instagrammers whose idea of comfort
food is juicing some kale. His approach
is instead to ditch ultra-processed food
and use his professional expertise to
pack in the flavour to decent sized
portions of healthy home cooked dishes.
When you think of the long hours and
stress they work under it’s perhaps not
surprising that chefs are often the last
people to eat healthily. As Tom said: “I
used to eat convenience food myself,
then I made a decision to change the
way I ate for the sake of my weight and
health. Ready meals and takeaways
are simple and quick but living off
processed food comes at a cost.
His latest book and TV series, Fresh
Start, see Tom tackle the problem of
making everyday household meals
healthy and ending our reliance on
processed convenience food.
“Finding the time to eat proper,
homemade food together as a family
is one of life’s biggest pleasures,”
says Tom. “I want to help people to
discover this for themselves and reap
the rewards. The aim of my new book,
Fresh Start, is to build confidence
around cooking in everyone who has
forgotten how to cook, never tried – or
has just fallen into the busy life trap. I
will provide you with plenty of recipes
and ideas to take control of your kitchen
and of what you eat – and to kick start a
newfound love of home-made food.”
There’s certainly lots to love about
recipes like these that manage to be
lower calorie but never feel less than
full of flavour.
