Menu a la Harts - Breakfast
Three Fruit Marmalade
Ingredients
1 blush grapefruit
2 unwaxed lemons
1 large Seville orange or a sweet
orange
Approx. 1.4kg granulated cane
sugar
1.75 litres water
5 x 450g jam jars
8 litre (approx. 16 pints) stainless
steel pan with lid
30 cm x 30 cm muslin square and
kitchen string
Method
1. Wash fruit, cut in half and juice. Reserve juice in the pan.
2. Keep pips in a separate bowl. Cut fruit in half once more and
carefully remove membranes. Chop this finely by hand or use a
processor adding a little of the water if necessary.
3. Add chopped membranes and pips together and secure inside
muslin square using kitchen string. Add to the pan.
Finely slice peel and add to the pan along with remaining
water. Replace lid and leave to soak overnight.
4. The following day bring the pan of soaked citrus fruit to the boil,
remove the lid and reduce heat. Simmer until peel is soft and tender
and volume of liquid has reduced by one third.
5. Remove muslin bag and discard. Measure liquid along with the
soft peel.
6. Calculate 450g sugar for every half litre of liquid.
Preheat oven 140 C or Gas Mark 1 and prepare to sterilise jars.
Warm sugar in the oven.
7. Place cooked peel and liquid into a clean pan over warm heat.
Add sugar and stir slowly until completely dissolved.
8. Increase heat and bring to a rapid boil. Do not stir but watch
carefully and test for setting after at least five minutes of rapid
boiling.
9. If using a sugar thermometer the marmalade should reach 104.5°
C for setting point.
10. Remove pan from heat and allow to stand for at least five
minutes. If necessary, remove any scum at this stage.
Stir gently to distribute peel. Pot and seal.
11. Date and label the marmalade when it is cold.
