What should be on your Christmas cheeseboard, and
which wine should you buy to go with your Stinking Bishop
or Old Winchester? A top Dorset cheese producer and one
of the country’s finest sommeliers have all the answers
J
ust like Bucks Fizz for breakfast and those little
sausages wrapped in bacon on an overflowing plate
of roast meats and veg, cheese, biscuits and more
wine after a massive three-course meal is one of
those indulgences that makes Christmas special.
That said, you don’t want to over-indulge – the perfect
cheeseboard will be made up of four or five cheeses,
each offering different tastes and textures. Here,
Francesco Gabriele, wine director at the 5-star Chewton
Glen Hotel and Spa, gives us a masterclass in matching
cheese with wine, while Mike Pullin, managing director
of Dorset’s Ford Farm Cheesemakers reveals his perfect
cheeseboard and suggests great gifts for the cheese lover
in your life this Christmas.
