a vacuum to suck the hot water through the grounds rather than forcing
it through under pressure. The result is a smooth refined coffee and a
machine that can be a talking point to watch as it makes the coffee.

Simple science is the basis to syphon
brewing. To start with you need to heat
water in the carafe. Add coffee grounds
to the brew unit that sits above the carafe.
Once the water starts to boil a vacuum is
created and the water is pulled up into the
top brew unit saturating the coffee grounds.
As soon as all the water has been forced
up through the syphon the heating element
automatically switches off releasing the
vacuum that has been produced. Gravity
then pulls the coffee back down into the
carafe. Remove the brew unit, which can be
placed into its stand, swap over the lid and
you are ready to serve. The end result is a
complex yet velvety coffee that has to be
