4 Garri & Groundnut In Nigeria, garri & groundnut is the single most popular street snack. Made with cassava flakes, this watery somewhat messy mixture is usually sweetened with sprinklings of sugar and milk, topped with groundnuts. Some others prefer to combine their flakes with suya (roasted meat), groundnut, kulikuli (snacks made from groundnut), coconut, fried meat, fish (raw, cooked or fried). In Nigeria, there’s two types of cassava flakes (white and yellow), so, be sure to request for the former to achieve the right local mix. 4 3 Kilishi 3 These skillfully cut sheets of meat are an original staple of the northern part of Nigeria. Kilishi also known as Kilichi is basically meat jerky sun-dried and immersed in slurry groundnut cake, sugar, salt and peppered spices, best gotten from the country’s capital, Abuja. Choose from the red kilishi (super spicy) or the white one (not-so-spicy), or just get one of each and call it a day. PROMOTING ENTERPRISE 35
