JEREMY FULLER’S LEMON CURD PIE FILLING Ingredients: 1 cup sugar 1/2 cup fresh lemon juice 3 eggs plus 1 egg yolk 4 tablespoons unsalted butter, cut into cubes and softened 1 teaspoon finely grated lemon zest 1/8 teaspoon fine salt Method: Fill a medium pot with 1 inch water and bring to a boil. Meanwhile, in a medium, heatproof bowl that can rest over the pot, vigorously whisk together sugar, lemon juice, eggs and yolk. Nestle the bowl into the pot and reduce the heat to maintain a simmer in the water below. Slowly and constantly whisk egg mixture, occasionally scraping down the sides, until very thick, 8 to 10 minutes. Strain mixture through a fine sieve, discarding any solids and transfer to a heatproof bowl. Stir in butter until well combined and then stir in zest and salt. While curd is still warm and fluid, pour into a pre-baked piecrust. GREENBOOK KEY LIME PIE Key limes are also known as Mexican or West Indian limes. If you can't find them in your area, substitute bottled Key Lime juice or simply use the more commonly sourced Persian limes. Filling: 1 tbsp finely grated lime zest 4 large egg yolks 1 14oz can sweetened condensed milk 1 cup fresh lime juice Whipped Cream: 1 cup heavy whipping cream 3 tbsp powdered sugar 1 tsp vanilla extract or paste 2 tsp lime zest Pour filling into prepared crust (preferably graham cracker, though chocolate or vanilla wafer will do. We’ve even heard of a crust made from crushed Honey Nut cereal). Bake in the middle of an oven preheated to 350°, for 12-15 minutes. Remove from oven and cool completely on a rack. The filling will set as it cools. Chill, covered, at least four but preferably eight hours. Top with freshly made whipped cream.
