Top Chef competitor and egg aficionado Chef Chrissy Camba of Maddy’s Dumpling House, shares her tips for making a perfect fried egg and an egg casserole recipe that must make an appearance at your brunch table this season. Eggs. Everyone knows about them, but their versatility is often overlooked. They are an affordable medium to create beautiful and tasty dishes. The Fried Egg Easy enough, right? I love crispy edges on my fried eggs. The key to this is a considerable amount of oil. 1. Use a pan large enough to fit your egg and place a thin layer of oil to cover the bottom. 2. The oil should be hot before you add the egg. Be careful of oil splatter when you add the egg. 3. It’s finished when the edges are crispy and brown with the whites set.
