POLAND Ingredients • ¾ pound trimmed or minced sirloin • 1 teaspoon salt • ¼ teaspoon freshly ground black pepper • 1 onion • 3 egg yolks • 1 egg • Extra-virgin olive oil, for drizzling • 2 tablespoons finely chopped gherkin SCHOOL : IM. B. PRUSA W SZCZECINIE Ingredients 11 1. Beef dice into tiny cubes so consistency resembles ground beef. (Alternatively, your butcher can do this for you.) Season beef with salt, pepper. Place seasoned meat in refrigerator to keep cold. 2. Take beef from fridge, add an egg. 3. Mix everything. 4. Divide chilled seasoned beef 4 ways, shape into small rounds, place 1 at center of each bread slice and flatten slightly into a rounded hamburger patty shape. In the center of each patty make a slight depression, large enough to hold 1 egg yolk. Place yolk in beef. 5. Surround depression with chopped onion and chopped gherkin. Leaving yolks unbroken, drizzle olive oil over meat around yolks. Sprinkle with pepper. 6. Serve with a piece of bread. ELZBIETA LUCZAK Starter
