F O O D La Mamma Say Ciao To The Best Italian Food In Town Location Sheraton Abu dhabi H ospitality wise, there are only a few hotels that match the five-star criteria and Sheraton is one of them. La Mamma is on the hotel’s ground floor. The warm and welcoming interiors give it a very rustic feel. The windows overlook the hotel’s main entrance and a beautiful jardiniere. Leading the kitchen, Chef Juri Pelusi has worked in some of the finest restaurants around the world. He brings with him the experience from Michelin star restaurants and blends it with his expertise to create a cuisine that makes you go back for more. Most of the pasta is homemade by the Chef without the help of any fancy machine. Our appetisers, the oven baked eggplant (Parmigiana di melanzane al Forno) and the fresh Stracciatella salad look attractive. The salad is served in a jar while the eggplant dish has a burst of bright colours on the plate. The eggplant and the tangy tomato sauce combination is a definite try. However, that one bite of the fresh 42 cheese salad takes the taste buds to a different delicious experience altogether. I find rocket leaves overpowering and not a flavour I enjoy but the Stracciatella cheese neutralises the intensity and adds freshness to it. You can taste every single ingredient that goes into the dish created by Chef Juri. All the flavours complement each other. While waiting for our main course, I watch the Chef demonstrate various pasta making techniques and tell us about his experience working with Michelin star restaurants, casual dining restaurants and the difference between the two. He says that one gets to learn a lot in a Michelin star restaurant. They have their rules and recipes. The techniques are hard at first and seem impossible to achieve but once accomplished; it gives you confidence and pride. With casual dining restaurants, you have to bring in your experience and recipes, and you have the freedom to run the kitchen with what makes you comfortable.
