Open-Faced Avocado
Egg White Scramble Sandwich
2 Pieces of Whole Grain Bread, Toasted
3 Egg Whites (or more if desired)
Oil Spray (canola, coconut or olive)
1/2 an Avocado
1/2 pint Cherry Tomatoes, Halved
Pinch of Garlic Powder
Salt and Pepper, To Taste
1/2 tbsp. Chopped Green Onion or Chives
Spray a small skillet lightly with
oil and place over medium heat.
Scramble the egg whites in a bowl
and pour into skillet. Fully cook the
egg whites. Mash and spread the
avocado evenly over two pieces of
toast. Sprinkle with a little garlic
powder, salt, and pepper. Spread
the cooked egg white scramble
over avocado toast and top with
green onions or chives. Cut the
cherry tomatoes and serve on the
side, topped with pepper.

fiber (avocados contain a good
amount of fiber too) will curb hunger.
