t the MakeOut Kitchen, there is a meal category called
The Morning After.
That’s when you use an ingredient or protein from
the previous night’s meal to craft something totally
different for breakfast.
Right now, it is pretty common practice to grab a roast chicken at
the grocery store for an evening meal. That leftover roast chicken is
the perfect ingredient for chilaquiles, a delightful, yet simple Mexican
staple dish. Replace the traditional Bloody Marys and mimosas with
Mexican-inspired cocktails, and you have a great south of the border-
style brunch.
