Imagine the scene: It was a cold rainy night; a perfect night to
stay home and cook. Side by side, chopping, marinating, prepping,
roasting, tasting and toasting. It’s also a perfect occasion to be really
well prepared for waking up the next day with an idea for a great, e asy
breakfast. We call that planning for “The Morning After.”
The Main Event
The main meal is a super flavorful, healthy combination of Dijon and
herb-coated, baked salmon, pan-roasted Brussels sprouts with garlic
and pesto, and a sweet potato cake accompanied with goat cheese and
sun-dried tomatoes. Each component stands alone, but beautifully
complements each other. It also is in no way heavy, so you get the rich,
robust flavor, without feeling weighed down by a big meal.

The next day … those Brussels sprouts and sweet potatoes make a
great base for a vegetarian hash. Add some onions and let the once-
cooked leftovers take on a whole new level of flavor in a hot skillet. Top
with an egg or two - your way - and you get an amazing, but simple and
quick dish that brings back memories of a successful, intimate evening.
