it’s a ritual to be enjoyed at every
Beijing duck restaurant. Quanjude

get busy so booking is essential.
A relative newcomer compared to
155-year-old Quanjude, Da Dong

1808) is unusual because its
excellent version is roasted for
almost twice as long as the
45-minute norm. At Duck de Chine
(+86 10 6501 8881) they dry birds
for two days before cooking to
ensure a crispy bronze skin.
