3. Remove and save 1 decilitre of the water and the sugar
mixture.
4. Pour the rest of the mixture onto the egg yolks, which
have been well beaten. Continue beating as you slowly
add the mixture to the egg yolks.
5. Bring the decilitre of the mixture to a boil until it is
caramelized.
6. Pour the caramel into
individual molds and the mixture on top.
