Almond & Sunflower Seed Salad (Vegan Chicken Salad) 1 1⁄2 c pre-soaked almonds 1 c pre-soaked sunflower seeds 2 to 4 stalks diced celery 1 small diced onion 1⁄2 tsp Celtic Sea Salt 1⁄2 tsp pepper 1⁄4 c water 3 Tbsp lemon juice 1 1⁄2 tsp kelp granules Directions: Soaking the nuts makes them absorb water, and impacts the texture of the nuts for use in recipes. Soaking nuts also makes them more digestible, but requires 1 to 2 hours.. Process the nuts in a food processor. Transfer to a bowl and combine with other ingredients.
