Lubbock, Texas In hopes of weather just a tad warmer than the Frozen Tundra, head on down to McPherson Cellars in Lubbock, Texas. The McPherson’s have been a part of the Texas grape and winemaking scene for over 40 years, with the start of it all coming from Dr. Clinton “Doc” McPherson. Doc, a chemistry professor at Texas Tech University, co-founded the Llano Estacado Winery in 1976. This winery was one of the first wineries in Texas to open after prohibition. Doc’s son, Kim McPherson, is now the winemaker for McPherson Cellars. Kim is a graduate from Texas Tech with a degree in Food Science, who also completed the viticulture program at the University of California. “Kim’s Texas wines have won over 450 medals in state, national, and international wine competitions,” Says McPherson’s Cellars. 26 FoodTraveler l Winter 2016 The winery is actually on the site of the former 1930s era Coca-Cola bottling plant in Lubbock; Kim opened its doors in the fall of 2008. McPherson Cellars sources all of its fruit from the Texas High Plains AVA, mostly from their Sagmor vineyard. The rest of the fruit comes from other local vineyards and farms, such as Timmons Ranch, Lost Draw, and Castaño Prado Vineyards.
