King Prawn Noodles
Ingredients:
100g whole wheat noodles
30g carrot
15g red cabbage
15g white cabbage
10g kale
6 king prawns
5g red/ yellow pepper
5g grated garlic/ ginger
10ml soy sauce
5ml fish sauce
5ml lime juice
25g pak choi
8g chopped peanuts
Spring onion and chilli and coriander
to garnish
Method:
1. To make the dressing, combine the
ginger, garlic, lime juice, fish sauce
(makes enough for 5 portions).
2. For the Asian style slaw, shred
the carrot, red and white cabbage
and kale, mix together in a bowl and
add a tablespoon of the dressing.
Toss well and add the chopped
peanuts.
3. Cook the noodles as to the
packets instructions and add the
spring onion, chilli and coriander and
mix well with a teaspoon of the
dressing.
4. Heat a frying pan with a table-
spoon of olive oil. Add the prawns
and cook for 5 minutes or until
cooked through. 2 minutes before
taking the prawns out, add the
peppers and pak choi and cook
together until soft.
