CHEESY TORTILLA PIZZA

15 mins | Makes 2-3 pizzas
Ingredients
Pizza sauce:
200g tinned plum tomatoes
5g dried apricot – finely chopped
½ tsp minced garlic
¼ tsp dried oregano
Pinch of ground black pepper
Pizza base:
2–3 mini tortilla wraps – white or wholemeal
15g medium Cheddar cheese – grated
Method
Preheat the grill to medium-low.
Pop the tomatoes and apricot in a food processor and blend until smooth, then pour into a saucepan and add the garlic, oregano and black pepper. Simmer on medium-low heat for 6–8 minutes, until the sauce has thickened. Set aside.
Lay the tortilla on a foil-covered baking tray and spread 2–3 tablespoons of pizza sauce evenly over the tortilla. Sprinkle over the grated cheese and pop it under the grill until the cheese has melted and is bubbling (this will only take a minute or two, so keep your eye on it). Remove from the grill, then cut into triangles. Leave to cool before serving to baby.
TIP: Add chopped peppers, chopped mushrooms and sweetcorn kernels and transform this finger food into a quick and filling after-school snack for older children.
