Favorite Fish Seasonings

You may have noticed over the years that I refer to Smokehouse fish seasoning from time to time ; and , I ’ ve found it continually frustrating to find this seasoning ; and , the last bottles I got through Ebay or Amazon from probably a small outdoor shop removing old inventory .

The company Smokehouse is still around ; but , they continually discontinue their delicious and
distinctive spice lines for fish , chicken , waterfowl ( so absolutely fabulous !!!), Upland Game , Venison …. Obviously , they haven ’ t been willing to market the seasonings as well as other products – such as their smokers .
It ’ s really a shame , as they made the best waterfowl seasoning and fish seasoning that we ’ ve ever had . From the past , I know it ’ s hard to duplicate their recipes .
A fellow who owned a bait shop got their permission to duplicate and sell their recipes in his shop and online . Although , his versions weren ’ t as good as the original , they did duplicate the flavors somewhat . But he retired and so that source dried up too . It ’ s sad that there are so few really good

“ Mmm ,” I answered , barely moving my rod .
“ I ’ m serious ,” he continued .
“ Can ’ t , Jimmy . I got a big one looking at my bait .” He laughed to think that I could feel a fish 600 feet down just looking at my bait !
“ Don ’ t say I didn ’ t warn you ,” he said .
Just then my rod curved sharply downward , and I began to reel . “ Told you !” said Jimmy .

fish or waterfowl seasonings anymore . Anyone out there know of any that are decent ? I would love to know . I suppose I could work on creating my own , I ’ d love to duplicate the Smokehouse recipes ; but , they really have ingredients that are difficult to get or to duplicate .
If you have a fish seasoning recipe that you think is especially nice , I would love to hear from you and share it with our readers . Meanwhile , I guess I better get started working on
my own . Lawry ’ s has a pretty nice seasoning that I just discovered in the Mexican section called “ Total Seasoning : for cooking & grilling .” It ’ s quite flavorful and tastes good on fish . For years , off and on , I ’ ve mixed a little millet flour into ordinary white wheat flour to give it a nice flavor and texture that is especially nice on fish . Although , millet has been touted as a fabulous alternative to wheat for those on a gluten free diet , some say that it can cause or exacerbate hypothyroidism , a serious and possibly debilitating condition .
So , although , I see a mountain of recipes online using millet , unfortunately , it pays to just use it sparingly , I guess . The recipe will be fine with whatever flour you use , I ’ m sure .
About halfway up my fish began to float , and I wound like crazy . “ Look !” cried passengers on the stern as the cow cod broke the surface . It weighed 26 pounds on Jimmy ’ s scales , and the deckhand threw it into the bow bait tank to keep it fresh .
As we moved back to the start of the drift , a guy from the stern dragged his biggest cow forward to measure it against mine . Not even close !
You had to admire the guy . I ’ ve never seen a man catch more cow cod on a single trip . He used a 10-hook gagnion and would bring up four or five cows per drop . And get this – he was “ using rubber squids ! Every time we ’ d move , he ’ d pull his biggest fish to the bow , but mine beat his

Sauteed Bass or Rockfish with Cheese Sprinkles

INGREDIENTS
• Small bass fillets
• Flour of your choice
• Lemon pepper ( or plain pepper and squeeze a little lemon juice on after browning both sides )
• salt or Lawry ’ s Total Seasoning , or favorite fish seasoning
• Butter & oil ( light olive oil )
• Mexican style shredded small cheese
DIRECTIONS
Season the fish fillets with seasonings and then dredge them in the flour . Heat up a skillet to medium high and add in the oil and butter – just enough so the fish doesn ’ t stick and gives it some flavor . Saute for a minute or so and then turn over and sauté for another minute .
Then , sprinkle on a little shredded Mexican style cheese ( usually most Mexican style cheeses are shredded small and contain cheddar and Monterey Jack , while some also contain Queso Quesadilla and Asadero cheeses ). If you prefer to use lemon juice rather than lemon pepper , squeeze the lemon juice on before you sprinkle on the cheese .
Just make sure you ’ ve allowed the fillets to reheat before you add the cheese , so that it will melt quickly . You don ’ t want to overcook your fish or have it get soggy . When the cheese has melted , you can remove the fillets to the plates . Simple , fast , and tasty ! Go for it !

every time . “ He ’ s famous , you know ,” said the guy fishing beside me . “ Him ? Who is he ?” “ He ’ s a famous singer . Can ’ t remember the name .”
I was stumped . A victim of what is called “ face blindness ,” I have trouble recognizing people until I know them very well . This guy had sandy hair sticking out from his head like a dandelion gone to seed , and he wore a T-shirt over what some folks call “ love handles .” In other words , he didn ’ t exactly stand out in a crowd . “ Tommy Roe ?” I guessed . No . It was only when we started in that I learned my rival ’ s name : Glen Campbell ! Star of his own TV show , a Grammy winner who collected gold records the way he collected cow cod that day . I ran the galley on the way in , and my challenger came in .
He was clearly recognizable with his hair combed – but I sensed that he enjoyed being anonymous so I didn ’ t break the spell . We chatted about fishing until Jimmy called me up to take a wheel watch .
Back at the dock , I appreciated how productive the day had been . My three gunny sacks bulged with cows , goldeneyes , and big bocaccio . I waited until the other passengers had offloaded their catch before wrestling my bags to the steps . There to help me tote them to my truck was my new friend . As he swung the last bag into the bed , I thanked him . “ So long , Fisherman !” “ Adios !” Glen Campbell has now sung his last song . He titled his last record “ Adios .” Adios , my friend . My memory of that day is one that I ’ ll always cherish .
