CRISP & JUICY A secret recipe sauce made from Rocoto peppers and whole chickens covered in special spices roasted over an open charcoal flame, make this small Peruvian chain a huge hit. The chain was launched in 1989 by Jorge and Carmen Perez. The entrepreneurial couple decided to bring the delicious Latin American taste of their Peruvian chicken to the Metropolitan area in Washington D.C. That first Crisp & Juicy opened in Arlington, Va. Today, there are Crisp & Juicy restaurants in Maryland, Virginia and Washington D.C. Considered a quick-service restaurant (NOT fast food), Crisp and Juicy offers authentic Peruvian fare that features rotisserie chicken al carbon, a traditional dish that originated in Lima, Peru in the 1950s. The distinctive aroma wafts from the kitchen, enticing passers-by to stop and experience the unique flavors of Peruvian cuisine. The consistency that they maintain is said to only be attainable using this traditional method, which makes the restaurant concept a unique and delicious experience.
