Preheat oven to 400 * F . Slice the squash lengthwise using a large knife . Sprinkle with a dash off olive oil , smoked paprika , and sea salt , then spread on a bakins sheet and bake in the oven for 20-25 minutes . Remove from the oven and let cool .
Put the desired amount of squash in a large bowl and toss with the arugula , olives , and pistachips . Stir the olive oil and lemon juice togeteher , then springlke on top of the salad and serve .

Roasted KabochA Squash Salad

Serves 2-4
Ingredients : 1 kabocha squash 1 teasoon smoked paprika 1 / 4 teaspoon sea salt 1 / 3 cup pitted kalamata olives 1 / 4 cup shelled , roasted pistachios 2 cups arugula juice of 1 lemon 2 tablespoons olive oil
