Ingredients

1 Whole Chicken

45ml Olive Oil

Robertsons MasterBlend for Roasts Rosemary and Garlic

Juice and Zest of 1 Lemon

For the Stuffing:

10ml Olive Oil

1 Onion finely chopped

1/2 Bunch of Spring Onions finely cut

150g Mushrooms finely chopped

5ml Robertsons Turmeric

30ml Robertsons MasterBlend for Roasts Rustic Garlic and Herb

Juice of 1 Lemon

375 ml Cooked Couscous

Egg

1 Egg lightly beaten

Mediterranean Vegetables of your choice

Instructions

Rub olive oil and Robertsons MasterBlend all over the chicken, even under the skin if possible.

Sprinkle zest and drizzle juice of one lemon over chicken and set chicken aside.

In a saucepan, heat the olive oil and fry onion until translucent. Add the spring onions, mushrooms, Turmeric and Robertsons MasterBlend and sauté for another few minutes. Drizzle with lemon juice, add the cooked couscous and beaten egg. Mix through and set aside to cool.

Stuff the cavity of the chicken with approx 1/3 of the stuffing.

Tie the drumsticks together and bake the Chicken at 190 °C for 30 – 40 min.

Roll the remaining stuffing into balls.

After 30 – 40 min, remove chicken from oven, add the stuffing balls and a selection of Mediterranean vegetables.
