Summer Popsicles By: Eri Akbar This is a cool idea for summer camp! Lots of learning can take place when children are involved in the process of preparing the popsicles. Here are some tips: Ice cube mould: Using this results in bigger quantities but smaller portions that are easier for young children to handle. Simply pop in ice-cream sticks - they may slant to the sides but it won't matter much to the little ones because the prospect of licking the tasty treat is enough to satisfy them! Greek yogurt: It is creamier and yummier. Fruit combos: Pair off mangoes and pineapples, peaches and blueberries, shredded coconut and pineapple, bananas and kiwis. Any kind of berries are always a good mix. Remember to check for allergies first. Add raisins: An alternative to honey to give that sweetness, especially to balance the flavour of fruits that may be a bit sour.
