Veggie Wraps with Avocado Spread
SERVES 2
ORGANIC INGREDIENTS:
AVOCADO SPREAD:
1 ripe avocado
2 Tablespoons avocado or olive oil
2 Tablespoons chopped cilantro
1 1 / 2 Tablespoons chopped parsley
1 /
2 Tablespoon honey
1 teaspoon apple cider vinegar
1 /
4 teaspoon sea salt
1 cup sliced cucumber
2 cups spinach leaves
1 cup sliced tomatoes
WRAPS:
4 tortilla wraps (can use gluten free wraps)
2 cups alfalfa sprouts
1 cup shredded carrots
PREPARATION:
Spoon 2 Tablespoons of avocado spread
onto each tortilla wrap then add 1 / 2 cup
alfalfa sprouts, 1 / 2 cup carrots, 1 / 2 cup
spinach leaves, 1 / 2 cup tomato and
cucumber slices. Fold ends in towards
center then roll wrap securely towards
you. Wrap in aluminum foil and place
in fridge until ready to transport in
cooler for picnic or outing.
Zucchini Hummus
SERVES 4-6
ORGANIC INGREDIENTS:
3 cups chopped zucchini
3 garlic cloves (finely chopped)
3 Tablespoons tahini
1 Tablespoon coconut aminos
(or 1 / 2 Tablespoon wheat-free tamari)
1 Tablespoon Garden of Life Chia Seed
1 Tablespoon olive oil
1 teaspoon cumin
1 /
2 teaspoon sea salt
1 /
2 teaspoon black pepper
PREPARATION:
Place all ingredients except chia seeds into a food
processor using the “S” blade. Process until smooth
and then stir in chia seeds. Refrigerate before serving.
Serve with sliced veggies and olives.
(Lasts three days refrigerated.)

DIY Kale Chips
SERVES 2
ORGANIC INGREDIENTS:
1 large bunch kale - stems removed
1 /
4 cup olive oil
1 1 / 2 Tablespoons nutritional yeast powder or flakes
1 teaspoon honey (or maple syrup)
1 teaspoon onion powder
1 teaspoon garlic powder
1 /
4 teaspoon sea salt
Store kale chips in a ziplock
bag in the refrigerator
for up to one week.
PREPARATION:
Whisk all ingredients together except kale.
Add in kale leaves and massage mixture
into the kale leaves. Lay kale leaves in
one layer on a parchment-lined cookie
sheet (you will need 2 cookie sheets).
Bake at 350° for 10-12 minutes.
Let cool and enjoy.
