When you buy your produce at the market, you trust your eyes,
your sense of smell and your experience to know that they are
good. For example, the sign says “Organic Tomatoes,” so you
pick one up, trusting it is a tomato (and not an imposter) and
you look for perfection: the ripe red color, the firm but flexible
flesh, no blemishes or soft spots. You won’t know how it tastes
until you get it home and cut it. But your experience tells you
that it is a tomato, and it should be okay for your recipe. You are
using age-old methods for testing your ingredients, and by and
