BASIL MINT
Pesto
USE ORGANIC
½ cup walnuts
¼ cup pine nuts
1 cup fresh basil leaves
½ cup fresh mint leaves
½ cup olive oil
2 garlic cloves, minced
½ Tablespoon nutritional yeast
powder or flakes
½ teaspoon lemon juice
¼ teaspoon sea salt
PREPARATION
Place walnuts and pine nuts in
a skillet and toast them on high
for a few minutes until they are
fragrant and begin to brown very
slightly. Next, add all ingredients
into a food processor using the
“s” blade except for the olive oil
and pulse about 20 times. Next,
process ingredients again while
slowly adding in olive oil (do not
over process, the pesto should
have some texture and not be
completely smooth). Serve
hot or cold with veggies, pasta,
proteins or bread.
