Crockpot Chicken Drummies SERVES: 2 TO 4 INGREDIENTS: 1 pound free range chicken drumsticks 2½ cups water 1 14.5-ounce can fire-roasted tomatoes 2 cups chopped carrots ½ cup chopped yellow onion ½ cup chopped celery 2 garlic cloves 2 Tablespoons apple cider vinegar 1 teaspoon sea salt ½ teaspoon black pepper ½ teaspoon dried thyme 2 bay leaves DIRECTIONS: Place all ingredients into the crockpot and make sure chicken is fully immersed in liquid. Turn crockpot on low and cook for eight hours. NOTE FROM GWEN: I use this recipe to make Murphy’s baby food. Simply take chicken meat off the bone and place it into a high- speed blender or food processor with carrots, celery, onions and some of the broth and add 1 Tablespoon Garden of Life ® coconut oil, and blend until smooth. Save remaining broth for future use by storing it in a glass jar (refrigerated) for up to six months. Strawberry Starburst SERVES: 1 Chocolate Protein Bars Vegan, Raw, Gluten Free, Dairy Free, Soy Free MAKES: 16 BARS INGREDIENTS: FOR THE BARS: 1 cup cashews 1 cup coconut flakes ½ cup sunflower seeds ½ cup pumpkin seeds 1 scoop Garden of Life RAW Protein & greens, chocolate 2 Tablespoons cashew or almond butter 8 Medjool dates, pitted 1½ Tablespoons Garden of Life coconut oil 4 or 5 dashes of cinnamon 1 Tablespoon of water dash of sea salt FOR THE CHOCOLATE SAUCE: ½ cup Garden of Life coconut oil, melted ½ cup maple syrup ¼ cup cashew butter ¼ cup cacao dash of sea salt DIRECTIONS: INGREDIENTS: 1 cup unsweetened almond milk 1 cup coconut water 1 scoop Garden of Life RAW Protein & greens ™ , vanilla 1 scoop Garden of Life Dr. Formulated Prebiotic Fiber, citrus 1 cup frozen strawberries 2 Tablespoons avocado 1 Tablespoon honey Place cashews, coconut flakes, seeds, protein powder, cinnamon and salt into a food processor using the “S” blade. Process everything down until you get a flour-like consistency. Add dates, cashew butter and coconut oil. Process again until well mixed; then add 1 Tablespoon of water and process one more time until the batter is sticky. Remove batter and place in a rectangular or square brownie pan. Press batter down until evenly distributed in pan. Drizzle chocolate sauce on top, and let set in refrigerator for a few hours before cutting into bars. Store in refrigerator for up to one week. DIRECTIONS: TO MAKE THE SAUCE: Place all ingredients into a blender Place all ingredients into a blender and blend until smooth. Enjoy immediately! NOTE FROM GWEN: I love our new RAW Protein & greens! Vanilla is typically my favorite, but you can make this recipe with the “ lightly sweet” flavor, too. I like to make this recipe before work because it keeps me full for 3 or 4 hours due to the Dr. Formulated fiber. You gotta try this one! and blend until smooth. NOTE FROM GWEN: I consider this recipe a trail mix on steroids turned into a dessert. This bar is loaded with protein, vitamins and minerals and tastes incredible. I make two batches of these bars so I can have extra on hand when I need a quick snack or a sweet treat. I served these at Murphy’s birthday party and people liked them better than the cake!
