This sweet, creamy and tangy dressing is bursting with nutrients.

Carrots boost the immune system.

Ginger is great for digestion.

Turmeric is a potent anti-inflammatory.

I love to slather it on salads, steamed veggies, grains and beans. It makes every dish sing!

This dress is very easy to prepare. Just throw everything into your blender and blend until smooth.

2 large carrots, peeled

1/2 apple, cored

1/8 onion, peeled

1 inch piece of peeled fresh ginger root

1/2 inch piece of peeled fresh turmeric root

1 teaspoon of mustard seeds or prepared mustard

4 tablespoons of olive oil

4 tablespoons of apple cider vinegar

1 teaspoon of sesame oil

Salt and pepper to taste

A little water to blend to desired consistency

This makes a big batch that you can use many times. Store in the refrigerator in a glass jar and use within one week.
