Debra’s Greek Salad

I know, I know - I’m Irish, Swedish and French, but trust me - I make a fantastic Greek Salad. With Spring in the air, I wanted to share this recipe because it’s substantial yet includes many light and lovely aspects like Spring!

This particular recipe came about because friends asked my husband and I to bring a Greek Salad to their dinner party. I searched for a recipe I liked, but couldn’t find one, so I altered a classic to my own tastes, and voila!

Reflecting on that dinner party: I was quite proud of my creation making Greek salad my way. When we arrived, our friend Paul answered the door in his art smock and informed us that we had arrived on the wrong Friday night! We were a week early. Cheers for being over-prepared!
