Once the holiday
season rolls around,
many drool over
the prospects of a
roasted ham and a
stuffed turkey atop
their dinner table.
However as the
number of Americans with restrictive
diets grows, the
classic image of
the holiday dinner is beginning to
change.
When I became
a vegetarian seven
years ago, my first
Thanksgiving dinner consisted of
mashed potatoes,
corn, and various breads. I was
at first excited to
have the Thanksgiving staple of
cornbread stuffing,
but was informed it
had chicken broth
in it, and therefore
would have to
be avoided at all
costs.
Next year, I came
prepared. I did
my research, and
with another fellow
vegetarian in tow,
I brought my own
version of a roasted
turkey: Tofurky®.
Tofurky is a 100%
vegan meat substitute sold in a
variety of styles:
“deli slices,” hot
dogs, pepperoni,
ground beef, and
their seasonal “Tofurky Roast,” a small
round, roasted
turkey substitute
stuffed with a rice
and whole wheat
bread stuffing. All
their products are
not only vegetarian,
but also completely
vegan.
For those who
want to experiment
this holiday by introducing vegan,
vegetarian and gluten free options to
the table, here are
few simple substitute
recipes.
