Seafood Mac & Cheese

I love this recipe because it seems decadent and expensive , but it uses mostly canned seafood , so you ’ re not breaking the bank . — Emily
Gruyère cheese is a hard , yellow cheese from Switzerland . It is a slightly sweet , nutty cheese that works well in baked dishes .
INGREDIENTS
1 ( 16-oz .) pkg . uncooked pasta ( you can even use multigrain pasta in this recipe ) ½ cup butter ½ med . onion , chopped 1 tsp . minced garlic ½ cup flour 4 cups 2 % milk 1 tsp . sea salt ¼ tsp . ground pepper ½ tsp . garlic powder ½ tsp . onion powder ¼ tsp . nutmeg ¼ tsp . paprika 1½ lb . coarsely chopped seafood ( like imitation crab meat , canned clams , canned tiny shrimp ) 3 cups shredded cheese , divided ( a combination of sharp cheddar , Parmesan , and Gruyère works well ) bread crumbs parsley
DIRECTIONS
Preheat oven to 400 ° F . In a pot of salted , boiling water , cook pasta to al dente , and then drain and set aside .
Melt butter in a medium saucepan . Add onion and garlic and sauté until tender . Add flour and stir constantly . Then whisk in milk . Bring to a boil and then turn down heat to a simmer .
Add salt , pepper , garlic and onion powder , nutmeg , and paprika . Cook until sauce thickens and then turn off heat .
Fold the sauce mixture , seafood , and 2 cups of the cheese into the pasta . Then transfer into a shallow baking dish . Top with remaining cheese and then sprinkle with bread crumbs and parsley .
Bake 15 minutes , or until cheese on top is bubbling .
