Mediterranean Sea. We mix the millenary heritage of this land with the modern culture

of digital. If you eat at us, you will taste our food through the words of our ancient Dialect.

“We started our project at the very ending of the year, when people draw conclusions on their annual activities, and others are eating a Panettone or playing tombola with the Grandma. We started our project during the cold winter, to immediately face the

hardest period of the year, just like Apache kids rolls in the snow to strengthen their

bodies and spirits.”

Floriano Pellegrino

Owner and Chef - Floriano Pellegrino 1990

Floriano was born in 1990 in the province of Lecce, in a small village called Scorrano. His passion and devotion to cooking come out of his’s family farmhouse lifestyle, reason for which he decided to attend the Alberghiero School in Lecce. After a period in the starred kitchen, Floriano Pellegrino joined the team of Chef Martin Berasategui. Experiences abroad continued with Chef Luis Andoni Aduriz, Eneko Atxa, Alexa, up to the end of 2015.

In November 2018 the Chef Floriano Pellegrino with Bros' restaurant won the first Michelin Star in Salento.

Partner & Head Chef - Isabella Potì 1995

Talented and determined, Isabella started his journey into the food industry by joining

the pastry team of Torreblanca. After such a great experience, she took part into the

kitchen team of the starred Chef Cloude Bosi (England) and Chef Barasategui (Spain). In the 2017 Forbes named her in the list of the most influencing 30 young under 30 of Europe. By the end of 2018, Isabella started a new project by becoming judge into the TV program “il Ristorante degli Chef” on Rai2.
