THE MASHED
POTATOES & GRAVY
Traditional
5 lbs yukon gold potatoes, peeled and
cubed
8 tbsp. of butter, divided
1/2 cup sour cream
1/2 cup shredded cheddar cheese
1 tbsp. garlic powder
2 tsp. onion powder
1/2 cup flour
2 cups turkey drippings, solids removed
MASHED POTATOES
1. Bring water to a boil over high heat.
2. Add potatoes and cook until tender,
about 10 minutes.
3. Drain potatoes and mash until lumpy
4. Add 2 tbsp of butter, 1/2 cup of sour cream,
1/2 cup shredded cheese, garlic powder,
and onion powder. Whip using a handheld
blender until smooth.

MAKE IT PALEO
1 head cauliflower
8 tbsp. ghee
Salt and pepper to taste
2 tbsp. arrowroot Starch
2 cups turkey drippings, solids removed
1. Steam cauliflower until tender.
2. Place in a food processor with 4 tbsp.
ghee, garlic, and salt and pepper. Blend
until smooth.
FOR GRAVY:
1. Melt remaining 4 tbsp. ghee in a small pan
over medium heat.
2. Stir in the arrowroot starch a little at a time
until evenly blended.
3. Stir in turkey drippings a little at a time until
gravy consistency is even.
GRAVY
1. Melt butter in a small pan over medium
heat.
2. Stir in flour a little at a time until wellblended.
3. Add turkey drippings a little at a time until
all has been added, stirring constantly.
4. Serve warm.
