What is It?
Vitamin K is a fat-soluble vitamin, so your
body stores it in fat tissue and the liver.
In addition to being found in leafy green
foods, the bacteria in your intestines can
make vitamin K.
Health Benefits
Vitamin K is best known for its role in
the blood clotting process. Additionally,
bone support involves different forms of
vitamin K.
Food Sources
Vitamin K can be found in kale, spinach,
collard greens, Swiss chard, parsley,
broccoli, Brussels sprouts, basil, asparagus,
bok choy, cabbage, celery and cilantro.
Spinach Pasta Bake
10 oz. whole wheat
penne pasta
1 package fresh baby spinach
1 tbsp. olive oil
4 cups chopped onion
2 medium tomatoes, diced
¼ cup all purpose flour
1. Preheat oven to 350°.
2. Cook pasta in boiling
water (as instructed on
the box). Remove from
heat; stir in spinach. Let
stand for 2 minutes or
until spinach wilts. Drain
pasta mixture well.
3. Heat a large nonstick
skillet over medium heat.
Add olive oil to pan and
onion; cook 15 minutes
or until golden brown,
stirring frequently. Add
flour and garlic; cook 1
minute, stirring constantly
