recipes APRIL 4 International Carrot Day GARLIC-PARM CARROT FRIES Serves 4 4 carrots 2 tbsp. olive oil ½ cup parmesan cheese 2 tbsp. garlic powder 2 tsp. salt Preheat oven to 400 degrees. Cut off the tops of the carrots and slice into 2-inch long thin sticks. Place the carrot sticks in a large mixing bowl and add remaining ingredients. Toss to coat. Spread on a greased baking sheet and bake for 15-20 minutes, depending on desired crispiness. APRIL 14 Quick no- bake snack, great for meal prepping National Pecan Day DATE & PECAN ENERGY BITES Makes 15-20 Energy Bites 1 ½ cup raw pecans ½ cup raw walnuts 12 large pitted dates 2 tsp. cinnamon ½ tsp. nutmeg 1 tsp. vanilla extract 1 tsp. sea salt (optional) In a food processor, add pecans and almonds and mix until a fine, grain-like consistency. Add remaining ingredients and process until a dough begins to form. Roll the mixture into 1-inch balls and chill for 15 minutes to an hour to set.
