National Meatball Day
GREEK MEATBALLS WITH TZATZIKI
Makes 25-30 meatballs
THE TZATZIKI SAUCE
½ cup grated English
cucumber, excess liquid
squeezed out
1 cup plain Greek yogurt
2 tbsp. fresh lemon juice
2 tbsp. chopped fresh dill
or ½ tsp. dried
¼ tsp. minced garlic
Salt and black pepper
to taste
Combine ingredients in a
medium size bowl, stirring
until mixed thoroughly.
THE MEATBALLS
1 pound ground turkey
¼ cup cup panko
breadcrumbs
4 tbsp. grated onion
1 clove garlic, minced
2 tbsp. fresh lemon juice
1 egg
1 tsp. dried oregano
½ tsp. ground cumin
¼ tsp. ground cinnamon
Salt and black pepper
to taste
¼ cup cubed or crumbled
feta cheese
Preheat oven to 375 degrees. In a large bowl,
whisk together the bread crumbs, grated onion,
garlic, lemon zest and juice, egg, spices, feta, and
salt and pepper. Add the ground turkey and combine
gently with your hands, being careful not to over-
work the meat mixture. Form approximately one-
tablespoon sized meatballs. Place the meatballs on a
greased baking sheet, and bake until no longer pink
in the center and browned on the outside, about 15 to
20 min utes.
