National Curry Chicken Day
CROCKPOT
CHICKEN CURRY
1 lb. boneless skinless chicken breasts
1 (24oz.) jar thick and chunky salsa
1 onion, chopped
2 tbsp. yellow curry powder
½ cup Greek Yogurt
Place chicken in crockpot. Combine salsa,
onion, and curry powder and pour over
chicken. Cover with lid and cook on low for 8 to
10 hours. During the last half hour, open lid and
cut or shred chicken as preferred. Add Greek
yogurt. Cover with lid for remainder of time.
Serve over rice.

NO-BAKE
FIG NEWTONS
THE FILLING
1 ½ cups dried figs
1 orange, juiced and zested
1 tbsp. honey
1/4 tsp. cinnamon
1/4 tsp. ground allspice
3-4 tbsp. water
Soak dried figs in warm
water for 30 minutes, being
sure to cover them with at
least an inch of water. After
30 minutes, drain figs and
combine with remaining
fig filling ingredients in a
food processor. Blend until
mostly smooth but still
chunky.

THE CRUST
1 ½ cups almond flour
1 ¾ cups oat flour
2 tbsp. coconut oil, melted
1/3 cup honey
1 ½ tbsp. orange juice
After making the filling (instructions left), in
a large bowl, toss to combine flour. Add
remaining ingredients and mix to even
consistency. Roll out wax paper on a baking
tray and place your crust mixture. Spread
dough until about ½ inch thick, making a
rectangle about 8 inches wide, give or take
a foot long. Cut a line down the middle of
the dough length-wise, making roughly two
4 x 12-inch rectangles. Cut the wax paper to
separate the two crusts. Place half of filling in
an even line down the middle of each crust.
Using the wax paper, roll the sides inward atop
the center of the filling until the two sides meet.
Refrigerate for at least 2 hours before cutting
into cookies. Keep refrigerated for best texture!
