National Bean Day
BLACK BEAN SOUP

1 medium onion, chopped
2 cloves garlic, minced
4 tbsp. extra virgin olive oil
1 (24 oz.) jar salsa (fresh salsa preferred)
2 (15 oz.) cans black beans
2 cubes chicken bouillon
4 cups water
Dash salt & pepper
Shredded cheddar cheese
Greek yogurt to top
In a large saucepan, sauté onion and garlic
in olive oil until tender. Add salsa and simmer
for 5 minutes. Add black beans, bouillon, and
water and continue to simmer on medium heat
for 1 hour. Season to taste with salt and pepper.
Serve and top with cheddar cheese and a
dollop of Greek yogurt, as desired.
