W hile the actual start of summer is June 21st, in Albuquerque we have been
experiencing summer weather since early May. When I think of summer…bar-
becuing and spending time outside by the pool or at a park with friends and
family comes to mind.
There is nothing better than chicken breast on the grill…the outside chars while
the inside stays juicy. I recently made a pineapple-jalapeño basting sauce for
chicken that was a huge hit at a Mother’s Day BBQ — I will be sharing that recipe
below.
Typically, pine-
apple is used as
a meat tender-
izer because of
the digestive en-
zyme called bro-
melain found in
the fruit. In this
particular recipe
I like the fresh
flavor it provides
after the cooking
process.
