EMB Restaurant Locavore Bali, Indonesia Jalan Dewi Sita, Ubud Cuisine: Contemporary International Locavore prides itself on sourcing 95 percent of its ingredients locally—a rather unique selling point in a country where chefs depend largely on expensive imports. By developing relationships with local farmers, fishermen and artisans, the restaurant is able to offer seasonal, chemical-free, contemporary cuisine. Such is its popularity, guests are advised to book two to three weeks in advance to secure a table—and the wait doesn’t end there. Locavore focuses on a series of five- and seven-course tasting menus, which can take between 1.5 and 2.5 hours to dish up. Rather than poor service, taking time over the preparation and serving of its dishes is part of the restaurant’s philosophy. A note to tobacco lovers: Locavore is a strictly non-smoking restaurant. The Test Kitchen Cape Town, South Africa The Old Biscuit Mill, 375 Albert Road, Woodstock, Cape Town Cuisine: Contemporary International The Test Kitchen was established by UK-born chef, Luke Dale‑Roberts, in 2010. Dale-Roberts trained in Switzerland and England before moving to Asia where he launched several restaurants in Singapore, Malaysia, South Korea and the Philippines. Since moving to Cape Town in 2006, his culinary skills have earned him and his restaurants a string of awards and accolades. The Test Kitchen is located in the regenerated Old Biscuit Mill in Woodstock. The restaurant interior has a distinctly industrial feel, with oak beams and exposed brick walls, ducts and piping. The lunch and dinner menus include carefully-crafted meat, fish and vegetarian dishes, with suggested wine pairings for each. La Bourgogne Buenos Aires, Argentina Avenida Alvear 1891, Buenos Aires, Argentina Cuisine: French & International La Bourgogne is the self-proclaimed king of French cuisine in Buenos Aires and is named after the home region of its founder and head chef, Jean Paul Bondoux. Chef Bondoux is the Argentine judge for biennial world chef championship, the Bocuse d’Or, and was awarded the Order of Merit from France’s ministry of agriculture for the promotion of French cuisine in South America. The restaurant, which opened its doors in the early 1990s, claims to be the only Relais Gourmand restaurant in Latin America and is located within the walls of the Alvear Palace Hotel. In addition to the main dining room with its white and red interiors, La Bourgogne also comprises two venues for private dining and tasting. The restaurant’s wine cellar, La Cave, is ideal for corporate or private meetings, while the Taste Vins room offers top quality cheese and wine experiences for small groups. EMBreview.org  97
