Are you tired of kale and chard yet? It can be a long winter without the bounty of summer we became so accustomed to. I tend to eat my weight in greens but I'm always wanting for more. Root vegetables to the rescue! Available year round, hearty and filling and packed with nutrients. Experiment with celeriac (celery root), parsnips, carrots or turnips in place of your potatoes this holiday and you'd be surprised at how versatile they can be. Because they all have a high starch content, they are satisfying and creamy without being too rich or heavy. Here I decided to stick to my two favourites - carrots and parsnips. I love the sweetness they both bring to a dish and the parsnip has a bite more of a spicy bite than carrots so they add a touch of depth to any dish.
