Cass’s Southern Banana Pudding from Cassidy McCorke Administrative & Membership Services SERVES 8 Ingredients 4 Cups Milk 4 Tbsp Cornstarch 2/3 Cup Sugar 4 Eggs, beaten lightly 1 ½ Tsp Vanilla Extract ½ Tsp Banana Extract 1 Box of Vanilla Wafer Cookies 3-4 ripe medium bananas, sliced 1 Large Container of Whipped Topping of your choice (i.e. Cool Whip) Shaved Chocolate & crushed vanilla wafers (optional for topping dish) Cooking Instructions 1. Gently whisk eggs and set aside within reach. 2. Using a whisk, combine milk, sugar and cornstarch in a saucepan over medium heat. Allow milk to heat to the point when tiny bubbles form around edges of pan (scald). Be sure to whisk occasionally to prevent cornstarch from clumping. 3. Remove milk mixture from heat. 4. Mix about 2 tablespoons of scalded milk mixture into eggs using whisk, then introduce eggs into milk mixture in a slow stream, whisking milk mixture constantly to prevent curdling. 5. Immediately return pan to heat and whisk gently until pudding thickens, usually only takes about two to three minutes. Do not allow to boil. 6. Remove pan from heat and stir in vanilla and banana extracts.* 7. Cool pudding 1-2 hours before assembling in baking dish * If you notice egg white strands in pudding, you can pass it through a fine-mesh sieve to remove, but do this before stirring in vanilla & banana extracts. Assembling Pudding In a large (9x13) baking or serving dish, layer vanilla wafers to cover bottom of dish. Layer sliced bananas over vanilla wafers, then cover with a layer of pudding. Repeat cookie/ banana/ pudding layers. Top second pudding layer with a final layer of bananas. Line edges of serving dish with vanilla wafers by sinking them into pudding. Cover final layer of bananas with whipped topping. Sprinkle entire dish with shaved chocolate & crushed vanilla wafers (optional). **TIME SAVING TIP: Substitute 2 large boxes of instant Jell-o Banana Cream Pudding for scratch made to speed up the process.
